Gummy Snack Recipe Using Gelatin

I’m a big proponent of women anywhere in their pregnancy journey getting collagen or gelatin in their diet. Collagen and gelatin contain nutrients that many women don’t get enough of such as the amino acid glycine. During fertility and pregnancy glycine, which is notably high in collagen and gelatin, is needed in much higher amounts than outside of pregnancy.

Ingredients
  

  • 2 cups juice I like to use 1 cup lemonade or tart cherry juice and 1 cup kombucha such as GT’s Synergy Trilogy flavor
  • 1/4 cup honey or maple syrup Optional. I find that I don’t need additional sweetness
  • 1 cup berries pureed Optional
  • 1/2 cup gelatin powder

Instructions
 

  • Pour the juice and/or kombucha into a small saucepan
  • Add the gelatin slowly to saucepan (adding too quickly will lead to clumps)
  • To start dissolving the gelatin, slowly mix the liquid using a whisk
  • Slowly heat saucepan over low heat until liquid starts to simmer
  • Add pureed fruit if using
  • As soon as the gelatin is dissolved and fruit is incorporated, pour the liquid into molds or a baking dish lined with parchment paper
  • Refrigerate until solid (about 1-2 hours)
  • Pop gummies out of mold and store in airtight container in the refrigerator for 1 week
